Food Fun

With spring comes the prospects of running our new business. In planning out our events, I was looking for a way to make things easier on the transportation end. I had purchased a new'er to me truck in the fall, and was looking to maximize its use. I was lucky to find the perfect truck cap, and at a reasonable price! All 5'-7" of me can almost stand up inside!
After sending out some emails, we were able to secure a couple early events. Our first one ended up being at a local brewery on St. Patrick's day. Not knowing what to expect, and an idea of the bustle a day like that can bring, we aimed for the moon and ended up over shooting a little.
The day was not as busy as we had expected, but we were able to sell a good amount of food that we felt great about. We had a robust menu that included pulled pork tacos with corn salsa and coleslaw, mac and cheese, handmade pretzels with a cheddar ale sauce, smoked corned beef tacos with fried potatoes, and chips and black bean dip. We ended up with a good deal of left overs that we ended up sharing with friends, froze it away for our own self, and some things that would we could use for our next event. All in all it was a great learning experience that we passed on to our next event 2 weeks later.
We were allowed the opportunity to serve alongside an awesome food neighbor at the grand opening to of a local ice cream maker extraordinaire. This time we were keeping things simple and delicious. Pulled pork tacos, smoked mac and cheese, black bean dip, and hand pies. The event went off without a hitch, we were set up and ready to go, and business took off for a fun filled 3 hours. We ended up selling out of everything but black bean dip. We had such a great time serving so many great customers and appreciated the response and feedback. What will become our signature taco, smoked pulled pork, coleslaw, corn salsa, blueberry chiptole bbq sauce, and a drizzle of a cilantro lime sour cream, was exactly what I wanted it to be. I am still drooling. In typical fashion, we were too busy slinging tacos to take pictures, so your imagination will have to do for now. 
And for Easter, in case you were wondering, yes, smoked pork is always a garnish

All and all it was a great way to open our food season. We have learned a lot and already discovered a great confidence in our abilities as business owners and taco slingers. With another 10 events secured, we should be experts in no time!
